Bit of a different post today thanks to BBC good food. My usual posts are ramblings on lotions and potions to help give you better skin but actually the best thing you can do for you skin is to feed it well. Spinach is filled with all sorts of healthy goodness such as lutein, which keeps your eyes healthy and sparkling. Plus it's is also a good source of vitamins B, C, and E, potassium, calcium, iron, magnesium, and omega-3 fatty acids. I like to think that not only is this the perfect yummy winter lunch but it's also keeping me healthy!
Ingredients
50g butter
1 medium onion finely chopped
1 medium potato
1 medium potato
2 garlic cloves finely chopped
400ml of vegetable or chicken stock
600ml of milk
450g of fresh Spinach
finely grated zest of half a lemon
freshly grated nutmeg
3 tbsp of double cream (for serving)
1. Melt the butter in a large saucepan with a lid, add the chopped onion and garlic and soften for 5 to 6 minutes. Stir in the potato and continue to cook gently for about 1 minute. Next pour in the stock and leave to cook for an additional 10 minutes until the potato starts to cook. Add the milk and bring to a simmer, then stir in half the spinach and the lemon zest. Cover the pan and simmer for 15 minutes until the spinach has completely wilted down. Allow to cool for about 5 minutes.
2. Now you can transfer the liquid to a blender and add the rest of the spinach. Leaving the rest of the spinach until this stage is to help the soup maintain it's vibrant green colour. Blitz the ingredients until your soup is silky smooth. You can also add salt and pepper to season and a little dash of nutmeg.
3. Serve your soup, swirl through some cream and enjoy with some nice crusty bread!
