

It's no secret that up North we have very little sunshine, in fact I class it as a good day if it's warm enough to venture out without a scarf. However, the last few weeks we've been treat to some very welcome unexpected sunshine. On the rare occasion that we have nice weather I like to head straight for the garden, good book in one hand ( I'm finally reading the Da Vinci Code - years behind I know) and a Green tea cooler in the other. This stuff is seriously refreshing and if you're feeling a little naughty a dash of rum spices things up a little.
Ingredients
Green Tea ( I use loose leaf Sencha)
2/3 cup of sugar
Several fresh mint leaves
Juice of two limes
Rum ( optional)
Directions
- Boil 1 and a half litres of water and add your green tea. It's up to you how long you brew it for ( I left mine for 15 minutes) and how strong you like it.
-Next add your mint leaves to the boiling water. Whilst this is brewing you can juice your limes.
-Add the limes and the sugar and leave to cool.
-Refrigerate and serve with ice.
