Chocolate chip oat cookies

When it comes to cookies, I’m a bit of an addict. There’s nothing I love more than sitting down with a good book, a big mug of a tea and a plate full of cookies. Now don’t get me wrong, store bought cookies are great but I don’t think you can beat the smell of freshly baked chocolate chippy goodness. Whilst these might not look like much the oats give the perfect amount of chewy texture and they’re loaded with melted chocolate.

These cookies are pretty easy to rustle up and you’ve probably got the ingredients lurking in your cupboard somewhere already.

You’re going to need:
·         half cup of butter
·         half cup of soft light brown sugar
·         half cup of caster sugar
·         1 cup of plain flour
·         1 1/4 cups of oats ( not quick cook, just old fashioned rolled oats)
·         1 egg
·         1/2 tsp baking powder
·         1/2 tsp bicarbonate of soda
·         1 cup of semi-sweet chocolate chips (or whatever chocolate you have to hand)
·         1 tsp vanilla extract


How to do it:
1.       - Preheat oven to 180 degrees and line two baking trays with grease proof paper

2.     -   Cream the butter and both of the sugars in a bowl

3.      -  Add the egg and vanilla extract and beat

4.      -  In a separate bowl add the flour to oats and baking powders

5.       - Then add the chocolate chips and the dry ingredients to the egg and butter mixture

6.      -  Beat together

7.       - Roll into 2cm balls and space about 5cm apart on your trays. If you can it’s a good idea to try and chill your mix before you pop it in the oven. This will help to keep your cookies thicker and stop them spreading too far. 1 hour should do it.

8.      -  Place in the oven for 8-10 minutes. It’s a good idea to check on them halfway through to check things are going smoothly!


9.       - Remove cookies from the oven and try not to scoff them all at once!
