
Okay, so as soon as Bake Off lands back on our screens it seems to whip me in to a baking frenzy. There doesn't seem to be a day goes by where I'm not in the kitchen whipping something up, or browsing Pinterest for some kitchen ispo. I'd actually spied this recipe (and drooled) a couple of weeks back on The Anna Edit and when I had a half used tin of Carnation Caramel lurking in the fridge I thought this would be the perfect recipe to use it up.
I've made brownies tons of times before and I sometimes find that the recipes can be a little bit fiddly and the ingredients can cost a fortune. This recipe, however, has a minimal ingredients list and you can literally chuck it all in one bowl and Bob's your uncle. I threw these together in about 15 minutes (+ cook time) and they went down a treat. We'd scoffed half of them before you can say "soggy bottom"

Ingredients
Makes 12 Brownies
For the Brownies:
150g dark chocolate
150g unsalted butter
250g unrefined golden caster sugar
3 free-range eggs
1 teaspoon natural vanilla extract
100g plain flour
For the salted caramel:
Now, I have to admit. I cheated here. I hate making caramel and I used my left over carnation caramel. I had to microwave it at little to make it a little runnier but it actually turned out really well and was lovely and gooey. You could even use a jar of salted caramel sauce and you can find this in most well stocked supermarkets.There's a recipe for making your own here though if you'd like to.
The how to:
Preheat your oven to 180°C/fan 160°C/gas 4, and grease and line a square tin with grease proof paper
To make your brownie mix:
Place a heatproof bowl over a pan of gently simmering water. Break your chocolate in to chunks and and it in to the bowl along with your butter and stir until well combined and melted.
Once melted, remove the bowl from the heat and stir in the sugar, followed by the eggs one at a time. Now add in your flour and vanilla and stir until all the ingredients are combined.
Pour the brownie mix into a lined tin and dollop a few teaspoons of your caramel on top. You can use a skewer and drag it through if you'd like to create a swirled effect.
Next, sprinkle your sea salt over your brownies
Bake for 25 minutes, Leave to cool and the cut in to 12 pieces, depending on how big you like your brownies
So how easy was that? The hard part is trying not to eat them in one sitting!
