Paul Hollywood's Banana & Chocolate Chip Loaf

Hands up who squealed when they realised GBBO was making a return to our screens? For some reason the mere thought of the show makes me feel like a master baker and in a whirlwind of hunger and enthusiasm I took to the kitchen.
Now I'll admit that this loaf is certainly no beauty ( Paul's was much more attractive) but against my better judgement I had a slice, or three, and I can confirm it is delicious. It's one of those perfect snacks for when you're just sitting at home reading a book and start to feel peckish. Comfort food at it's best. It might not be the Leonardo DiCaprio of cakes but it definitely delivers in the taste department.


Ingredients
4 ripe bananas
250g caster sugar
2 eggs
140g of softened butter
250g plain flour
2tsp baking powder
100g walnut pieces
100g chocolate drops


Method

  1. Heat oven to 190C/170C fan/gas 5. Line a 900g/2lb loaf tin with baking parchment. In a large bowl, mash together the bananas and the sugar with a fork. Add the eggs and mix well , then add the butter and mix for a couple of minutes more to blend everything together. Sieve in the flour and baking powder and fold together with a spatula, then add the walnuts and chocolate chips. Stir everything through then tip in to the loaf tin
  2. Bake for 1 hr 5 mins or until a skewer inserted into the middle comes out clean. Leave to cool slightly in the tin, then turn out and serve cut into thick slices
